In terms of the customization of the video conference system, Jitsi allows us to make this happen. Also, it allows us to integrate with PBX so that participants can join the conference over GSM calls. In terms of less appropriate, SFU architecture requires more powerful resources to manage multiple calls, but the advantage is that server-side, we require minimum resources to run all the components.
I started using Jitsi as a medium to connect with my team members as we all are working from home. It is a great tool for having a one-on-one as well as for a group conference of more than 15 people. I generally use it to have talked with my colleague regarding the work process.
Pros

Cons

I think anyone can use host a meeting using Jitsi easily. It has user-friendly UI. It can be used for daily meetings, small online conferences, etc. Jitsi is best for having a quick conference call without having to think of its setup process. You can also create a separate lobby for people to wait while other people are busy talking in the main room.
Jitsi is being used as a tool for communication between team members. We can host small as well as big meetings in Jitsi, and the meeting room can be protected using a password. Also, good audio quality and video background changing featured in its latest version has made it really a professional tool. In our organization, we use it every day during the standup meeting for the department.
Pros
Background changing
Screen sharing
Secure meeting room
Easy to join
Cons
Improve the quality of video during screen sharing, especially when we are sharing only test content.
It consumes a lot of bandwidth if we share our screen as well as open the camera.

If you need a tool that is very easy to use for a small and quick online meeting, then you can go for Jitsi. However, if you are looking for a professional tool that provides a lot of features like scheduling a meeting, recording the meeting, etc., then there are other tools that fit your requirements better. However, Jitsi is a nice tool that can also be used for personal calls.
